I absolutely LOVE paella. If you have never made it yourself, you are missing a fantastic cooking adventure. I promise you that once you learn to make paella, it will become your favorite dish to serve at all your gatherings of friends and family. I learned to make paella seven years ago from the most wonderful Italian chef friend who had lived in Spain. We called him the “King of Paella,” for no one could make paella that had the flavors and texture that he could create. I have since made paella many times, and each time it gets better and better. There is an art to making a great paella. If you stick with it, you will have many years of making paella that brings you treasured satisfaction, along with all those who are lucky to partake of this festive Spanish dish.
