Many stories surround the origins of the name of the Spanish rice dish known as paella. One that seems to be believed by linguists is that it was named after the large, flat pan it is cooked in. One thing is certain, it was created around the mid nineteenth century in Spain. This dish used what was available and was not as tasty as a seafood paella recipe devised today.
Around this period in time workers in the fields would begin cooking rice over a slow fire. Adding whatever ingredients were available made these dishes unique. Obviously the size of the meal grew with each ingredient added. Wild vegetables and herbs were added at different times, giving the dish a variety of textures. Meat ranged from snails, snake and frogs to the occasional wild rabbit.
Perhaps a bit more refined is a popular recipe today known as the seafood paella. Ingredients are chosen by what sounds delicious, not by what is available. Learning the Spanish expressions for the foods adds to the enjoyment of the dish. Begin by gathering everything needed together .
Several types of fish may be used including 2 medium squid (calamare), 1/2 pound of shrimp (camarones) mussells (mejillones) and 5 cups of fish broth (caldo de pescado). Other ingredients include 2 cups of rice (arroz), tomatoes (tomates) an onion (cebolla) and red pepper (rojo pimiento) and green pepper (verde pimiento). Also a small can of peas (guisantes). For added flavoring, a clove of garlic (ajo) and some parsley ( perejil) are added, along with salt(sal).
A large flat pan is heated with 1/2 pint of olive oil ( aciete de olive) over medium heat.To this is added one chopped verde pimiento and one rojo pimiento. Toss in the diced cebolla and the chopped tomates to cook for 5 minutes. The calamare is added after being sliced in strips and then the arroz. The mejillones are steamed open in a separate pan and set aside for a moment.
Next mix in a separate bowl the ajo, parijil and the sal. This mixture will be folded into the arroz mix to be cooked and stirred continuously over medium heat. When the rice is tender, the mejillones, 1/2 pound of camarones and a small can of guisantes are all added. These are added late to preserve the tender texture of the foods. This completed combination needs to be cooked for another 20 minutes. However, the whole idea of this dish is that it can be cooked for a long period of time with ingredients added over time.
Although the base of paella is traditionally arroz and broth, the possibilities of a Seafood Paella Recipe are endless. Whatever fish, vegetables or seasonings you like are acceptable. The important thing to remember is to add them at various times to ensure a difference in textures.
Learning a new cuisine and learning a new language such as Spanish is easier when done together. The word association becomes hands on. This can be done with any recipe for paella, and is a great way to become bi-lingual.

How to Learn to Speak Spanish | Speak Spanish
Where can I learn conversational spanish? What programs should I use if no spanish speakers are nearby?
I would like to be able to aproach anyone of mexican / hispanic decent and make myself understood in a conversation. However, my community is mostly white, and I don’t have anyone to learn from. I’m looking for learning suggestions…should I try the college where I expect to find only the basics of formal spanish, and not conversational…or is there a program I can teach myself…a long distance tutor maybe? HELP!! Either way, I’m on a budget, and can’t affort much.
I’m learning spanish for free using pocasts. If you have iTunes (or download it because it is free), and open iTunes music store and click the link to podcasts. Then click the education link. There you will find hundreds of podcasts which teach Spanish, or French or German or Chinese or Japanese or Greek etc. And the best thing is that they are all free! The only problem you may encounter is that the Spainish language podcasts tend to focus of Spain’s Spanish rather than that of Latin America or the Catalan regions. However, I sweear by podcasts and seeing that they are free there is nothing to lose!
